Veggie Dinner
Asparagus, Baked potato, Corn, Black-eyed peas and cornbread.
The other night Chase had asked for a veggie dinner so that is what I cooked. It was so very easy!!Baked Potatoes:
I bought the kind that come wrapped in the plastic so all you have to do is heat them in the microwave for 6-7 minutes. They cooked very well and tasted great. We topped our potatoes with butter, sour cream, graded cheese, salt and pepper.
Corn:
So easy....I used one can of whole kernel yellow corn. I added a 2 tsp. margarine, salt and pepper to taste.
Black-eyed Peas:
One can of plain black-eyed peas. I added salt and pepper to taste. That's all and they were great!
Asparagus:
Here is the tricky part. Not really!
-Preheat oven to 400 degrees.
-Line the bottom of a 9x13 (or smaller, depending on how much you're cooking) with aluminum foil. This is great because once you've eaten it all, just throw the foil away, wipe out the pan and put it back.
-Using one bundle of fresh asparagus, cut the bottoms off the stalks and lay them in the pan.
-Next, drizzle asparagus with extra virgin olive oil
-Then sprinkle the asparagus with garlic salt and lemon pepper seasonings.
-Cook in the oven for 12-15 minutes. Remove and eat right away.
They are WONDERFUL!!
Corn Bread:
Okay ladies here is how to make real homemade cornbread.
-You'll need a 5-6 inch black iron skillet, buttermilk, white cornmeal and margarine.
-Preheat oven to 400 degrees.
-First, scoop 6-7 HEAPING tablespoons full of the cornmeal in a bowl.
-Add small amounts of buttermilk to the cornmeal until the consistency is like pancake batter.

-Once the butter is melted, remove the skillet from the oven and pour the butter into the batter. Stir together and pour and mix into the skillet.
-Place the skillet into the oven and cook for 20-25 minutes or until the top begins to brown.
-Remove skillet from oven and turn it over onto a plate allowing the cornbread to fall out onto the plate.
-Cut into pieces and serve. It's wonderful with butter on top.
